Season 2 Episode 22: Bandamana Saga

32 ounce yogurt
1 teaspoon kosher salt
Line a colander with 4-6 layers of cheesecloth, and spoon the yogurt into the center. Wrap the yogurt in the cheese cloth and tie off. Suspend over a bowl so it can drain and place in the refrigerator for at least 24 hours. Check repeatedly to ensure that the liquid doesn't get to high. Save this for fermented whey drinks!
Unwrap the cheese, and place in a bowl, discard cheesecloth. Add salt and mix until smooth.
Line a ramekin with 4-6 layers of cheesecloth. Spoon in the cream cheese and smooth off the top. Lay heavy plastic wrap or one side of a plastic bag over cheese, trim to fit. Fold cheesecloth over. Cover ramekin with plastic wrap. Fit a piece of cardboard into the top of ramekin so it can press down. Put weight on top.
Refrigerate and press for 2 days.Pour off any additional liquid that gathers in the ramekin. Remove and unwrap, and enjoy your homemade cream cheese.
